Never, EVER, boil chicken -- unless, of course, you're making a rubber chicken as a gag present. Here's the secret to tender chicken: 1) start with a hot pan and hot oil, and 2) DON'T OVERCOOK IT!!!!! Take the chicken out of the pan before you think it's fully cooked and tent it with foil on a plate to rest for 5-10 minutes. The "carryover" cooking will finish the job and your chicken will be tender and juicy!
